Chicory is a blue-flowered plant in the dandelion family, its roots have been used since ancient times in egypt, for both food and medicine. Its said that chicory root is used for the liver, heart health, constipation, and swelling. However there is not enough clinical research to definitively draw any conclusions. However by the year 1860 the French government was importing 16 million tons of chicory by the year! It was possibly due the fact that chicory goes so well with coffee and is often mixed with coffee beans to enhance or stabilize the jittery effects of coffee.
